con aminan o ma ion. To add ess hese challenges, non- he mal p ocessing echnologies such
as high-p essu e p ocessing, pulsed elec ic ields, adio equency, and ul asound o e e icien
pa hogen des uc ion simila o adi ional he mal me hods, while educing he p oduc ion o key
p ocess-induced oxican s such as u an and 5-hyd oxyme hyl-2- u u al (HMF). These al e na i e
he mal p ocesses aim o o e come he d awbacks o adi ional me hods while e aining hei
ad an ages. This e iew pape highligh s he g owing global demand o heal hy, sus ainable

mic obiological and chemical sa e y, as well as senso y and nu i ional p ope ies in IF
and BF p oduc ion. Pionee ing echnologies such as high-p essu e p ocessing (HPP),
ul asound (US), pulsed elec ic ield (PEF), and adio equency (RF) a e leading esea ch
