BACKGROUND
One o he main goals o he FEAST p ojec is o co-c ea e inno a i e and e ec i e ools, p og ams
and s a egies wi h key s akeholde s in Eu ope ha suppo consume s in adop ing heal hy and
sus ainable die s and li es yles. To each his objec i e, i is impo an ha we ac i ely in ol e he
communi ies o which we de elop hese solu ions. Wo king wi h li ing labs is one o he co e
elemen s o he Feas p og am because hey p omo e co-c ea ion while le e aging he pa icipa ion
o end-use s (ci izens, including ulne able g oups) by ga he ing hei eal-wo ld insigh s and local
knowledge. To suppo his wo k, we c ea ed a guideline o conduc wo kshops in which li ing labs
can co-design solu ions o add ess ood- ela ed challenges in hei communi ies ha help ( ulne able)
ci izen g oups o make heal hie and mo e sus ainable ood choices.
Co-design me hods ha e hei oo s in pa icipa o y designs and a e a p omising app oach o engaging
ci izens and s akeholde s in in e en ion and policy-making p ocesses. I empowe s pa icipan s o
exp ess hei unde s anding and needs conce ning an issue and c ea es oppo uni ies o gene a e new
pe spec i es, sha ed insigh s, and a i udinal o beha iou al change. The s akeholde s in ol ed in his
co-design p ocess can be mul iple: i is possible ha he pa icipan s a e he a ge g oup o he
solu ion, bu hey can also be ele an s akeholde s ha play an essen ial ole in shaping he die s o

2. Bo lenecks and quali ies
In he i s ound, pa icipan s iden i ied exis ing bo lenecks by w i ing hem on pos -i s, which hey
hen placed on a pos e displayed on he wall. The pos e included h ee dimensions—mic o, meso,
and mac o le els—bu did no ye ca ego ize he bo lenecks in e ms o ' ood li e acy,' ' ood
p e e ences,' ' ood a ailabili y,' o ' ood a o dabili y.' These ca ego ies we e la e mapped by he
esea che s.
Mos o he bo lenecks expe ienced by pa icipan s we e a he meso le el, speci ically wi hin hei
immedia e ood en i onmen (Figu e 1). They no ed he low a ailabili y o heal hy and sus ainable
ood op ions in supe ma ke s, ake-away ou le s, and schools, combined wi h he high a ailabili y and
p omo ion o as ood. The lack o sales es ic ions and he high cos o heal hie al e na i es we e
also men ioned as bo lenecks.
Despi e hese challenges, pa icipan s also ecognized se e al posi i e de elopmen s a he meso le el,
pa icula ly in he school (Figu e 2). Wa m meals a e a ailable, unheal hy snacks as ea men s ha e
been phased ou , and he e is inc eased a ailabili y o egan and ege a ian op ions in he communi y.
Addi ionally, he e is mo e ocus on p o iding smalle po ions and heal hie op ions ailo ed o
child en. Se e al ini ia i es a e con ibu ing o he a ailabili y o heal hie and mo e sus ainable ood,

Ghen has been a pionee in he ield o sus ainable ood and sus ainable ood policy o yea s. In
2013, he Ci y launched he Ghen and Ga de ood s a egy in collabo a ion wi h many
s akeholde s. Sho ly a e wa ds, he Food Council was es ablished, he pa icipa o y policy body
o Ghen and Ga de. In he yea s ha ollowed, he ood policy was u he shaped and Ghen
de e mined h ee s a egic objec i es which a e used as a amewo k o de e mine Ghen 's ood
policy and o e alua e esul s:

The Ci y o Ghen was one o he i s ci ies o de elop a local ood policy. In 2020, hey assessed
he ood en i onmen s in he Wa e spo s and Heilig Ha neighbo hoods. The Heilig Ha wijk
was hen de ined as a ood swamp (lo s o junk ood o e ), he Wa e spo swijk as a ood dese
(ha dly any ood o e ).
The main objec i e o he li ing lab in Ghen is o imp o e access o heal hy and sus ainable ood
o indi iduals in ulne able si ua ions. A su ey among use s o a ious ood ini ia i es showed
ha people in po e y ha e li le o no knowledge o he supply o heal hy and sus ainable ood
in he neighbou hood. Fo a ious ood supplie s who a e ac i e in he neighbou hood, i also
appea ed ha hey hemsel es know li le o no hing abou he o e o ano he supplie . The
aim o his wo kshop is he e o e o ge o know each o he and o come up wi h new ac ions
whe eby he a ge g oup inds i s way o he a ious ini ia i es.
