Consump ion o cloudy apple juice seems o be mo e bene icial han consuming clea apple juice

due o changes in phenolic compounds and loss o pec ins du ing cla i ica ion p ocess

(Ma kowski e al., 2015). Howe e , colo and cloud s abili y a e main challenges in p ese a ion

o cloudy apple juice du ing i s p ocessing and s o age. Enzyma ic b owning in cloudy apple

juice is due o he ac ion o polyphenol oxidase (PPO) ha ca alyzes he oxida ion o phenolic
29
compounds o quinones. On he o he hand, he mechanism o cloud s abili y is no ye
30
unde s ood. Among he di e en mechanisms p oposed, elec os a ic epulsion by nega i e

cha ges p esen in he pa ly deme hyla ed pec in due o galac u onic esidues could be

Golden delicious apples we e peeled and cu in cubes and hen added o a 0.3 % o L-asco bic

acid solu ion o a oid enzyma ic b owning du ing p ocessing. Apple cubes we e wiped and

immedia ely squeezed wi h a sc ew juice ex ac o . The liqueu was il e ed wi h 2 laye s o

cheeseclo h. The pH o he juice ob ained was 3.89 ± 0.01 and he soluble solid con en was 12.5
