The specificity of knowledge management in the food industry in Poland

Abstract

The article presents an analysis of the problems of knowledge management in the food industry in Poland, which was carried out on the basis of the results of the author’s own study. The study was conducted in the years 2007-2013. The research shows that businesses established in the food industry are actively involved in the use of knowledge management instruments including: elements, tools and all kinds of sources of cooperation. The company's production processes use various sources of knowledge. It should be noted that outstanding cooperation takes place between customers and suppliers, as well as in external training. A weak interest of the surveyed enterprises in using the knowledge of the acquired business, and very insignificant cooperation with universities or research centres was discovered. Companies frequently acquire knowledge in trade relations, but also from specialist companies with an appropriate base which was also recognized as the most useful sources. The lack of cooperation with universities and research centres can attest to the impossibility of its use in practical applications in enterprises, or a lack of understanding of the benefits of this kind of cooperation. It is stated that, in the years 2007-2012, less than 2/3 of the surveyed enterprises of the food industry carried out activities related to the implementation of elements of knowledge management in the enterprise; internal training proved to be the most supportive in implementing acquisition and transfer of knowledge; more than half of the surveyed enterprises of the food industry spend funds on knowledge management, increasing them annually; surveyed companies noted the annual increase in the average level of financial resources incurred for the management of knowledge in the years 2007-2011(except 2010).

o ce (Fi lej & Rydz, 2012a).

ood sec o companies, as a esul o which

e i ciency and p o i (Fi lej & Rydz, 2012b)

Knowledge plays a special and impo an
ole in he de elopmen o any indus y and i
is “in o ma ion, skills in some a ea acqui ed
h ough lea ning, li e expe ience, e c., as well
as a esou ce o news o he domain and
abili y o become awa e o some hing” (Słownik,
1996). Manage s o ood indus y companies

dependencies occu ing in ca ying ou he
p ocesses o inno a ion, c ea ing o ganisa ional

2. Fac ual Ma e ial, Pu pose and
Resea ch Me hodology
Since 2000, he ood indus y in Poland has
expe ienced a pe iod o p ospe i y, as wi h he
accession o he Eu opean Union in 2004, he
ba ie s o Polish p oduc s disappea ed, allowing
o he expo o ood and encou aged p oduce s
o inc ease p oduc ion. As A. Kowalski no es,

Based on he conduc ed esea ch, we sough

by i s echnology and mode n in o ma ion
echnology, whe e is posi ioned in ellec ual

o gene a ing compe i i e ood businesses, as
well as managemen cul u e, o ganisa ional
clima e, and he alue o social esponsibili y.

The s udy began by iden i ying he
economic si ua ion in which he ood
businesses ound hemsel es in he pe iod
om 2007-2012. In he analysed pe iod, he
companies ope a ing in he ood indus y
skil ully used he possibili y o ob aining unds
om he EU s uc u al unds. Businesses
had a ange o Ope a ional P og ammes a
hei disposal, he mos impo an o which
included: 5 na ional Ope a ional P og ammes

doing business in he Special Economic Zones

P esen ing he su eyed companies i was
calcula ed ha mos o hem ha e ope a ed on
he ma ke o mo e han 20 yea s (30.7%),
20.2% unc ioned in he anges o 11-15 yea s
and 16-20 yea s, 16.1% unc ioned in he ange
o 6-10 yea s and 12.7%in he ange o 0-5
yea s. The s udy in ol ed 65% o companies, in
which had headqua e s in he ci y and 35% in
u al a eas. In e es ing esul s we e ob ained by
asking abou he size o he place in which he
company ope a es, since mos o hem we e
loca ed in he smalles owns wi h a popula ion
o less han 5 housand esiden s (40.1%) and
in ci ies wi h a popula ion o 100,000 and abo e
(23.6%). This ep esen ed a o al o 63.7%,
which is almos 2/3 o he o al popula ion,
and he emaining 1/3 (26.3%) was comp ised
o companies om owns wi h a popula ion
be ween 5 housand o 99,000 esiden s
(Fig. 1). The p esen s udy also de e mined he
ac i i y o hypo he ical ma ke o businesses. I
should be no ed ha esponden s hemsel es

ac i i ies, which was o ob ain in o ma ion on
he exis ing ma ke , as well as commen on he

ob ained showed ha he la ges numbe o

(28.8%), ollowed by he coun y (22.1%), he
po ia s (18.7%) and municipali ies (16.5%).

Taking in o accoun he c i e ion o he

4. The Resul s o he Resea ch in he
A ea o Knowledge Managemen
in he Polish Food Indus y

as well as om benchma king (Fig. 5). The

employees. Based on ou esul s, i was ound
ha in ood indus y en e p ises, sou ces o
knowledge de i ed om new employees can be
e y use ul (16.20%) and use ul (49.80%). This
shows he g ea in e es o companies ec ui ing
pe sonnel, in oducing new ypes o knowledge
in o he companies, which in he u u e may
ansla e in o gene a ed p o i s. Ne e heless,
1/3 o he esponden s conside ed hese
sou ces no e y use ul o he ope a ion o
companies (27.30%) and 6.70% had no opinion
on his subjec . Sou ces o knowledge de i ed
om he acqui ed companies we e e alua ed
qui e di e en ly, as li le mo e han a qua e
o he esponden s assessed hem posi i ely.

o achie e he company’s goals. The sou ces

ha e been assessed as e y use ul (13.8%)
and use ul (31.5%), which accoun ed o less
han hal o he esponden s. As many as 54.7%
o he esponden s el hese sou ces a e o li le
use (41.2%) and 13.5% o hem had no opinion
on he ma e .
One may ques ion whe he such a look
a he sou ces o knowledge de i ed om he
s a egic in es o is he p e e ed solu ion o he
ood business. The s a egic in es o , in addi ion
o he acquisi ion o a signi i can s ake in he
company, should ha e signi i can in l uence on
i s managemen , which should signi i can ly be
suppo ed by he possessed in ellec ual capi al,
know-how, skills and expe ience gained.

2.6% espec i ely), and some did no ha e an
opinion (3% and 1.5%).

ha e hei own opinion. Businesses, howe e ,
