Pu pose o he s udy: o analyze he echnological isks a he p oduc ion s ages o e e escen
able s wi h whi e mulbe y ex ac (Mo us Alba L.).
Ma e ials and me hods: he ollowing me hods we e used in he wo k: an analy ical e iew o
scien i ic li e a u e and he pha maceu ical ma ke , me hods o compa a i e analysis o echnological
schemes, isk assessmen based on c i e ia o equency o occu ence and deg ee o impac on
p oduc quali y.
Resul s: he s udy e ealed ha he main c i ical ac o s in he p oduc ion o e e escen able s
wi h he bal ex ac s a e:
1. Mois u e – hype sensi i i y o Mo us Alba L. ex ac . esis ance o mois u e leads o he
des uc ion o ac i e subs ances and a dec ease in e e escence. To minimize his isk, i is necessa y
o use mois u e-p oo packaging (aluminum blis e s, ubes wi h desiccan s).
2. Tempe a u e egime – high empe a u es a he s age o d ying and p essing can des oy
la onoids and i amins. Op imiza ion o he g anula ion echnology and he use o mild d ying
modes make i possible o main ain he ex ac ac i i y.
3. The quali y o he aw ma e ials – mulbe y ex ac may ha e a di e en con en o
biologically ac i e subs ances depending on he g owing condi ions. S anda diza ion o he ex ac
by ma ke subs ances ( o example, by he con en o u in and que ce in) ensu es quali y s abili y.
4. O ganolep ic p ope ies – he ex ac has a speci ic as e, which may educe he consume
appeal o he d ug. The solu ion is o in oduce la o s (lemon, o ange) and swee ene s (aspa ame,
suc alose).
FMEA (Failu e Mode and E ec s Analysis) isk assessmen showed ha he highes le el o
isk (RPN = 180) is associa ed wi h exposu e o mois u e, he a e age le el o isk (RPN = 120) is
associa ed wi h luc ua ions in ex ac quali y, and he low le el (RPN < 80) is associa ed wi h
o ganolep ic cha ac e is ics.
Conclusions: hus, he p oduc ion o e e escen able s wi h Mo us Alba L ex ac I equi es
an in eg a ed app oach, including s anda diza ion o plan aw ma e ials, op imiza ion o
echnological modes and p o ec ion o he p oduc om mois u e. The economic e iciency o he
