Resul s: The chemical na u e o phy oncides is complex and s ill poo ly unde s ood. I was
es ablished ha ci ic acid phy oncides consis o a mix u e o a ious subs ances, among which he
iden i ied ones a e essen ial oils (ge anyl ace a e, limonene, ci al), la onoids (gespe idine, na ingin),
aldehydes, cyanoic acid, e c. Fla onoids (gespe idin, na ingin), aldehydes, cyanoic acid, e c. The
biological ac i i y o phy oncides is usually explained no by a single known subs ance, bu by he
uni y o all subs ances. The phy oncidal p ope ies o ola ile ac ions o phy oncides and issue juice
a e dis inguished. Phy oncides a e widely used in medicine. They ha e an ibac e ial, an i ungal, and
an i i al p ope ies, and can ha e an an ihelmin h and an i i al, an i-alle gic, and immunos imula ing

Conclusion: In domes ic and o eign li e a u e, in o ma ion on he in luence o en i onmen al
condi ions on he s o abili y o ui s, he accumula ion and s o age o he main componen s o hei
chemical composi ion is limi ed. The s udy o physiological and biochemical changes occu ing in
ipening and s o ed ui s makes i possible o heo e ically subs an ia e he op imal s o age pe iods
and egime o hei in oduc ion in o he na ional economy. All me abolic p ocesses occu ing in
plan s a e associa ed wi h espi a ion, he e o e i s ac i i y is, in a ce ain sense, he mos impo an
ac o de e mining he shel li e o ui s. Lemon is also ich in pec ins. They a e especially abundan
in ui peels, whe e pec ins make up ~20-40% o all d y ma e .
