NutriLabs — Translational Innovation in Adaptive Systems Engineering U.S. Presidential Scholars Program (CTE) Sahasra Kolli Niwot High School | Innovation Center of St. Vrain Valley Schools | CTE Pathway – Business & Entrepreneurship [email protected] Overview NutriLabs is a translational research and innovation project focused on developing nutrient-dense, plant-based formulations designed to reduce glycemic load and improve metabolic health outcomes. The concept was developed in response to India’s growing diabetes epidemic, now affecting over 100 million people. Innovation The formulation uses adaptive systems engineering to refine traditional legume-based foods through optimized soaking, blending, and enzyme treatment. These processes enhance amino-acid bioavailability and protein digestibility while minimizing oil and sodium content. The goal is to create sustainable, scalable foods that combine traditional culinary practices with modern nutritional science. A U.S. Provisional Patent was filed on October 31, 2025, with methodology diagrams illustrating each stage of processing and stabilization. Research Integration NutriLabs originated from Sahasra’s independent investigations into sugar alcohols and inflammatory responses, as well as analyses of consumer behavior in global nutrition markets. Current work expands upon these findings through preparation of a manuscript for submission to the Columbia Junior Science Journal (CJSJ).
