BACKGROUND
One o he main goals o he FEAST p ojec is o co-c ea e inno a i e and e ec i e ools, p og ammes
and s a egies wi h key s akeholde s in Eu ope ha suppo consume s in adop ing heal hy and
sus ainable die s and li es yles. To each his objec i e, i is impo an ha we ac i ely in ol e he
communi ies o which we de elop hese solu ions. This is why we c ea ed a guideline o conduc
wo kshops in which Li ing Labs can co-design solu ions ha help ulne able g oups o make
heal hie and mo e sus ainable ood choices.
The FEAST p ojec is co- unded by he Eu opean Union’s Ho izon Eu ope esea ch and inno a ion
p og amme unde g an ag eemen numbe 101060536.
Co-design me hods ha e hei oo s in pa icipa o y design and a e a p omising app oach o engaging
ci izens and s akeholde s in in e en ion and policy-making p ocesses. I empowe s pa icipan s o
exp ess hei unde s anding and needs conce ning an issue and c ea es oppo uni ies o gene a e new
pe spec i es, sha ed insigh s, and a i udinal o beha iou al change. The s akeholde s in ol ed in his
co-design p ocess can be mul iple: i is possible ha he pa icipan s a e he a ge g oup o he
solu ion, bu hey can also be ele an s akeholde s ha play an essen ial ole in shaping he die s o
he a ge g oup (e.g. i he ulne able g oup a e child en, his can be pa en s, eache s, school boa d,
e c.). Co-design wo kshops ha e p o en o be an e ec i e me hodology in iden i ying he needs o a
communi y and co-c ea ing (policy-based) solu ions and in e en ions (Bason, 2016; Kim & Nam, 2022;
Kimbell, 2017).
This handbook is p ima ily w i en o acili a o s o suppo hem in conduc ing he co-design
wo kshop. Wi h he ou comes o he wo kshop, he Li ing Lab can gene a e new insigh s and o mula e
conc e e ac ions ha could s imula e he consump ion o heal hy and sus ainable ood wi hin he
communi y. Wi hin FEAST, we will collec and analyze he agg ega ed ou comes o he di e en
wo kshops, which can se e as inspi a ion o o he Li ing Labs.

MODEL AS BASIS FOR CO-CREATION
To p o ide pa icipan s a s uc u ed and o ganised app oach, a ill-in model is used o ge inpu ,
s imula e discussion and s uc u e pa icipan s’ inpu du ing he wo kshop (see Figu e 1). The model
uses a cogni i e mapping-app oach and os e s sha ed unde s anding among he pa icipan s, making
he co-design wo kshop mo e s uc u ed and he e o e, mo e e icien .
Fo he pu pose o his wo kshop, he c ea o s designed a model ha is inspi ed by he Bolk model o
Posi i e Heal h and Li ing En i onmen (see websi e). The Bolk model is de eloped a he Louis Bolk
Ins i u e ( an Wie ma schen e al., 2022) and is inspi ed by he Heal h Field concep de eloped by
Lalonde (1974) and he Ecological Sys ems Theo y o B on enb enne (1979). I in oduces bo lenecks
and quali ies o he physical and social en i onmen in ou unde s anding o heal h choices, and
s uc u es he sphe es su ounding an indi idual o a case, spanning om he mic osys em (immedia e
su oundings) o he mac o sys em (b oade , collec i e con ex ).
The wo kshop inco po a es elemen s o G oup Model Building (GMB). Howe e , since he GMB
me hodology can be qui e complex, challenging o pa icipan s, and ime-consuming—making i less
sui able o he mo e p ac ical app oach o li ing labs— a sligh ly adap ed me hod has been de eloped.
While s ill using some key elemen s (such as g aphs o e ime and cogni i e mapping), he ocus shi s
owa d a mo e human-cen e ed design. The co-design echnique applied in his ound is based on an
exe cise om a p e ious HORIZON p ojec (FIT4FOOD2030), which has p o en o be an e ec i e ool
o co-c ea ing ood policy (Wagne , 2020). We ha e adap ed i and inco po a ed b oade in e en ion
ypes based on Michie e al.'s (2011) Beha iou Change Wheel, o suppo he c ea ion o bo h policy-
based solu ions and in e en ions.
Du ing his wo kshop, we use he model o map di e en elemen s ha in luence heal hy and
sus ainable ood choices o a speci ic a ge g oup — ac oss he h ee le els; mic o (pe sonal,
household), meso (communi y, ci y) and mac o (na ional policies). In o de o enhance c ea i e
hough s and unbiased inpu , his model (unlike he Posi i e heal h model) con ains no dimensional
classi ica ion (e.g. access, skills, p e e ences, e c.). Howe e , when using his model du ing he
wo kshop, i is impo an ha he acili a o keeps he di e en dimensions in mind. This way, he
acili a o can ensu e ha no pe spec i es a e o e looked. This will u he be explained in he ele an
sec ions in his handbook.
