Abstract
In this workshop, participants will explore how food traditions can become drivers of innovation in building sustainable food systems. Starting from European food quality policies and the most recent developments linked to the Green Deal and the “Farm to Fork” Strategy, they will discover how the law can protect local knowledge and promote biodiversity, as well as how supply-chain actors and bottom-up forms of regulation are becoming increasingly central. Through concrete case studies and interactive group activities, participants will be invited to reflect on the future of food, balancing authenticity, ecological transition, and the active participation of communities. It will be an opportunity to combine different forms of knowledge and collectively imagine new food models, shaped by a tradition that evolves over time.The workshop activity is aimed primarily—but not exclusively—at teachers and educational practitioners.
